Cookin' with Momma!

Nothing in the world is better than Momma's Cooking. The one good thing about living in your hometown with your parents is the possibility of home cooked meals. This time I had to beg Momma for some of her cooking. I got Lasagna last week! I can make a recipe but it just doesn't taste like when she cooks, so I've asked her to start a new tradition with me. Every Sunday (when Adam is gone), Momma is going to teach me a new meal. She taught me how to make easy homemade mashed potatoes and pan fried pork loin. Yum Yum!!

Homemade Mashed Potatoes
5 to 6 potatoes
teaspoon of salt
3/4 stick of butter
whipping cream

Peel 5 to 6 potatoes and rinse. Cut them into equal sized pieces and boil them until you can stick a knife or fork easily in them. Drain. Mash with potato masher or fork until all of the clumps are out. Add whipping cream, butter and salt until your desired consistency. Whip.


Pan Fried Pork Loin
1 pork loin (trim fat)
Milk
Italian bread crumbs
corn bread mix (unsweetened)
Salt
Pepper
Canola oil

Cut pork loin into 1/2 inch steaks. Soak in milk for 20 minutes. Put equal parts Italian bread crumbs and corn bread mix into a bowl. Take pork out of milk and place in dry mix and coat. Coat bottom of frying pan with 1/4 inch canola oil and heat. Let steaks fry until they are cooked half way through and flip. Steaks should be brown.
