Blackened Snapper Recipe.

My husband likes to fish...and maybe I should even lean toward he loves to fish. For the past 43 days it has been Red Snapper season and he's been fishing as much he can. I just want to make sure he's safe out there on the water because he kayak fishes. He has a Hobie Pro Angler (you know the kind with the foot pedals) and it's a pretty wide kayak so I feel he's pretty safe out there and I even made him get one of those red flags to go on the back...but he has a bright yellow kayak that's hard to miss.
 


Now, what you're really here for is the recipe. My freezer has been full of fish and I'm still learning how to cook different recipes. The past couple of times I just used Lawry's Herb and Garlic Marinade and just baked it on 350 degrees for 15 to 20 minutes. But...I wanted to step out of my comfort zone and I wanted some blackened/Cajun grilled fish. So here it goes.

Ingredients (serves 2-3)
  • 2 large red snapper fillets
  • 1 tbsp paprika
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1 tsp oregano
Start by combining all of the seasonings together in a bowl and mash with the back of a spoon to grind.
Next, take your two pieces of snapper (don't forget to rinse them) and spread the seasoning mix generously on both sides of each fish. You can set these in the refrigerator for 30 minutes to marinate to get some of the flavor to seep in. If you don't have the time then go ahead and turn on your grill to medium heat. 



We use a grilling pan to make sure the fish doesn't fall through the grill. Cook for 3 to 4 minutes on each side. Be careful when flipping as it likes to fall apart and also fish cooks pretty quickly. After it is grilled, it's ready to serve.

Here is how I finished the meal, with some fresh sauteed asparagus. This is my husband's new favorite recipe. If you want to do a lemon butter sauce for the top, just mix 2 tablespoons of butter and 2 tablespoons or lemon juice together, spoon over the top and serve.
