Our Favorite Asparagus.

I never thought I liked asparagus. I sent the hubby to the store to grab some things for dinner and he comes home with asparagus for a vegetable side because of course he loves it. Not being a huge vegetable fan, I had no idea how to cook it and I started looking for recipes. I finally found one that is so easy and we love it. We make it ALL of the time and it's a staple to add to your recipe collection.

Stir-Fried Asparagus

1-1/2 pounds fresh asparagus, trimmed and cut into 2-inch pieces (about 4 cups)  (I just trim the ends off)
2 tablespoons of butter
1 tablespoon vegetable oil
3 tablespoons chicken broth
1 teaspoon lemon juice
1 teaspoon soy sauce (I use a lot more than a teaspoon)
1/4 teaspoon pepper
2 tablespoons slivered almonds, toasted (optional)

In a large skillet or wok, stir fry asparagus in butter and oil for two minutes. Stir in the broth, lemon juice, soy sauce and pepper. Cover and cook for 2 to 3 minutes or until asparagus is tender. Sprinkle with almonds. Yield: 4 servings (or in our case 2 servings)
